Zuppa Toscana (Olive Garden Copy-Cat)

Hearty Zuppa Toscana Soup

This hearty Zuppa Toscana recipe (inspired by Olive Garden) is super quick and easy to make, bursting with Italian flavors! The perfect cozy meal on a winter's evening. I am using creamy Yukon Gold potatoes, and adding my sweet Winter Garden Kale for this recipe. You can also use store fresh, frozen or even dehydrated kale, and it turns out delicious!

Once prepped, it's super simple!


Once all ingredients are chopped and prepared, it's just a matter of combining together for a quick, easy delicious meal. If using russet potatoes, you will want to peel the skin, but Yukon Gold potatoes, or baby red potatoes are completely fine not to peel if they are scrubbed clean first, then diced.

Serve with fresh bread, or in this case, my Sourdough Discard Lavash - it's SO GOOD!
