This wonderfully easy to make lavash flatbread is made with 100% unfed sourdough discard, and can be made in less than 10 minutes! Add seasoning of your choice and it becomes a yummy addition to a dinner table, party appetizer with dip, or pair with a hearty bowl of soup.

The recipe is simple, the possibilities are endless. I just like the fact that there is a way to use up all the discard while growing my starter, or making my sourdough bread. Best of all, it has its own beautiful tangy sourdough flavor, so seasonings are totally optional.
This flatbread lavash recipe can also substitute beautifully as a base for crepes or Swedish pancakes. Just add a little honey or sweetener of choice to the batter. When completely cooked, just fill with favorite fillings and either roll up or fold together.
If you are keeping the discard flatbread plain, I would however add a little salt to the mix since sourdough starter doesn't have any. I just sprinkle a little sea salt on top of the pan directly before pouring the discard onto it.
Once the pan is oiled and heated, the process goes rather quickly. I like to add the seasonings to the pan before pouring the sourdough discard batter. Don't worry if it's not perfectly round,flatbread lavash can be rustic and misshapen and it will still taste amazing- no such thing as perfection here!


Once removed from the pan, slice the flatbread into triangles, and serve warm.
If serving the next day, you can always reheat in a toaster oven, or microwave for a few seconds.
