
Why Make Homemade Vanilla Extract?
Why make extract when you can simply buy it from the store? If you have ever tasted homemade vanilla extract, you wouldn't even ask that question!
Open up a bottle of store bought and compare the smell to that of homemade. Now imagine how much more rich and flavorful the taste will be when used in all your baked goods. There's no comparison!
The cost difference is a factor too. I can make a batch of homemade vanilla extract for a fraction of the store bought price.
What Type of Vanilla Beans should I Use?
Always use grade B Vanilla Beans when making extract. Usually you will see them listed as, Tahitian Grade B. Vanilla Beans. I use these vanilla beans .

Recipe:
Split lengthwise 4-5 vanilla beans, place in bottle.
Fill bottles with either vodka, or rum. (I use these bottles)
I use rum because it is so much more flavorful. You can use vodka, however vodka is made from grain, so it can cause gluten issues for some.
Next, cap the bottle and store in dark cupboard. Extracts will be ready for use in about 6-8 weeks, but is most flavorful the longer you store it.
Also, you can keep adding the alcohol to the same batch as you use it and extend it for months!
