ALCOHOL FREE VANILLA EXTRACT

Why Alcohol Free?


For certain non-cooking applications such as whipped cream,

or no- bake treats, this is a wonderful option for those who are avoiding any form of alcohol.


For those wanting an alcohol free vanilla extract, here’s a two ingredient version, and two different ways to make it. Both are simple!

Place 5 split, and cut grade B vanilla beans into a pint size mason jar.

















Fill with 10 ounces food grade

vegetable glycerin in each jar. I use this brand of glycerin.

Place lids and bands on jars, and at this point you have two options.

SLOW METHOD:

Wait six months, shaking the jars everyday and store in a dark pantry.

Since we are using vegetable glycerin, instead of alcohol it can take up to six months to fully infuse.





THE QUICK OPTION:



A hand places a jar in a pressure cooker. The jar lid reads "For Jars." The cooker is metallic and shiny, creating a reflective effect.


Speed up the process and place jars in an instant pot or similar pressure cooker, with 1 cup water, on a trivet.


Process on high pressure for 35 minutes, natural release.

When jars are cool enough to handle, SHAKE the jars vigorously for one minute after removing from the pressure cooker.

Store in a cool dark cupboard for two months to allow total infusion. Shake jars daily for the first several weeks.



Glycerin is thick like syrup, and also has its own sweetness. You can use approximately half the amount for recipes calling for the vanilla extract that is made with alcohol.
