
What is a Pan Muffin you ask?
The short answer: Two dozen beautiful muffins, all in one pan.
What started out as a way to quickly whip up a couple batches of muffins in the morning, has now turned into one of my most requested recipes.
No muffin tins or paper liners required, just a 9x13 baking dish.

The advantage to this method is the clean up is quick and minimal.
Even before the oven is done preheating, I can have the batter prepared and waiting in the pan, the mixing bowl and measuring spoons loaded in the dishwasher, and the counters wiped down.
Plus, with no individual muffin tins to clean up afterwards, it’s a time saver for sure!

Just bake with the same Universal Muffin Batter that I use for regular, individual muffins.
The beauty of a Universal Batter is that it is extremely versatile.
Use whatever “toss-ins” you have available.

Here are some suggestions: Fresh, Frozen, Bagged, Canned, Dehydrated, or whatever you have on hand!
blueberries, strawberries, apples, raspberries, bananas, peaches, pears, grated carrot, zucchini
coconut, raisins, craisins, ANY dried fruit,
pecans, walnuts, almonds, flax seed, chia seeds
jam, preserves, applesauce
chocolate chips, chopped up chocolate bars left over from holidays,
nutella, peanut butter, almond butter
